Inspired by Chinese 'dan dan' noodles. Known for its spicy, creamy broth, it combines sesame paste, chilli oil, with ground meat - and is a popular comfort food in Japan.

Ingredients
For convenience, use Yutaka Tantan Ramen Meal Kit and just add your toppings.To cook from scratch:
- 200g minced Pork or Chicken
- 200g Yutaka Udon Noodles
- 1 tbsp vegetable oil
- 1 mall piece of fresh ginger, grated
- 2 garlic cloves, minced
- 1 tbsp Sesame paste
- 1 tsp Shaoxing Rice Wine
- 2 tbsp Yutaka Soy Sauce
- 1 tsp chilli oil (adjust to taste)
- 500ml chicken or vegetable stock
- 100g pak choi, chopped
- 2 spring onions, finely sliced
- 1 tbsp Yutaka Sesame Seeds
Directions
- Cook the noodles according to the package instructions. Drain and set aside.
- Heat the vegetable oil in a large pot over medium heat. Add the grated ginger and minced garlic, sauteing for 1-2 minutes until fragrant.
- Add the minced pork (or chicken) to the pot, breaking it apart with a spoon. Cook for 5-6 minutes until browned and cooked through. Season with salt and pepper.
- Stir in the sesame paste, rice wine, soy sauce and chilli oil, mixing well to combine.
- Pour in the chicken or vegetable stock and bring to a simmer. Cook for 5 minutes.
- Add the chopped pak choi to the pot and simmer for an additional 2-3 minutes until the pak choi is tender.
- Serve the Tan Tan Ramen by dividing the cooked noodles into bowls, ladling the broth and mince mixture over the top.
- Garnish with sliced spring onions and sesame seeds before serving. Enjoy!
