Tantan Ramen

Inspired by Chinese 'dan dan' noodles. Known for its spicy, creamy broth, it combines sesame paste, chilli oil, with ground meat - and is a popular comfort food in Japan.

Ingredients

For convenience, use Yutaka Tantan Ramen Meal Kit and just add your toppings.

To cook from scratch:
  • 200g minced Pork or Chicken
  • 200g Yutaka Udon Noodles
  • 1 tbsp vegetable oil
  • 1 mall piece of fresh ginger, grated
  • 2 garlic cloves, minced 
  • 1 tbsp Sesame paste
  • 1 tsp Shaoxing Rice Wine
  • 2 tbsp Yutaka Soy Sauce
  • 1 tsp chilli oil (adjust to taste)
  • 500ml chicken or vegetable stock
  • 100g pak choi, chopped
  • 2 spring onions, finely sliced
  • 1 tbsp Yutaka Sesame Seeds

Directions

  1. Cook the noodles according to the package instructions. Drain and set aside. 
  2. Heat the vegetable oil in a large pot over medium heat. Add the grated ginger and minced garlic, sauteing for 1-2 minutes until fragrant.
  3. Add the minced pork (or chicken) to the pot, breaking it apart with a spoon. Cook for 5-6 minutes until browned and cooked through. Season with salt and pepper.
  4. Stir in the sesame paste, rice wine, soy sauce and chilli oil, mixing well to combine.
  5. Pour in the chicken or vegetable stock and bring to a simmer. Cook for 5 minutes.
  6. Add the chopped pak choi to the pot and simmer for an additional 2-3 minutes until the pak choi is tender.
  7. Serve the Tan Tan Ramen by dividing the cooked noodles into bowls, ladling the broth and mince mixture over the top. 
  8. Garnish with sliced spring onions and sesame seeds before serving. Enjoy!
