Tsukune meatballs
Tsukune are juicy Japanese chicken meatballs in a satisfyingly sticky glaze.

Ingredients
- 500g Chicken Thighs
- 2 Garlic Cloves
- 1 Tsp Ginger
- 1 Tsp Lemon Zest
- 3 Tbsp BBQ Sauce
- 1 Tbsp Yutaka Soy Sauce
- 1 Egg (White Only)
- 2 Tbsp Tomato Ketchup
- 2 Tsp Worcestershire Sauce
- Sesame Seeds and Yutaka Sushi Ginger to garnish
Directions
- Preheat your oven to 180c.
- Finely chop your chicken thighs, onion, garlic and ginger. Grate the lemon for the zest.
- Combine 2 tbsp BBQ sauce, soy sauce, ketchup and Worcestershire sauce in a bowl and set aside.
- Blend the chicken, onion, garlic, ginger, lemon, zest, 1 tbsp BBQ sauce and egg white into a blender.
- Once the mixture is smooth, use your hands to form balls around the size of golf balls and place on a tray covered in baking paper.
- Place the tray in the oven and cook for 10 minutes, before basting the meatballs in half the sauce and returning to the oven for a further 10 minutes.
- Serve with the remaining sauce drizzled over, along with a sprinkling of sesame seeds and sushi ginger.
