Tsukune meatballs

Tsukune are juicy Japanese chicken meatballs in a satisfyingly sticky glaze.

Ingredients

  • 500g Chicken Thighs
  • 2 Garlic Cloves
  • 1 Tsp Ginger
  • 1 Tsp Lemon Zest
  • 3 Tbsp BBQ Sauce
  • 1 Tbsp Yutaka Soy Sauce
  • 1 Egg (White Only)
  • 2 Tbsp Tomato Ketchup
  • 2 Tsp Worcestershire Sauce
  • Sesame Seeds and Yutaka Sushi Ginger to garnish

Directions

  1.  Preheat your oven to 180c.
  2. Finely chop your chicken thighs, onion, garlic and ginger. Grate the lemon for the zest.
  3. Combine 2 tbsp BBQ sauce, soy sauce, ketchup and Worcestershire sauce in a bowl and set aside.
  4. Blend the chicken, onion, garlic, ginger, lemon, zest, 1 tbsp BBQ sauce and egg white into a blender.
  5. Once the mixture is smooth, use your hands to form balls around the size of golf balls and place on a tray covered in baking paper.
  6. Place the tray in the oven and cook for 10 minutes, before basting the meatballs in half the sauce and returning to the oven for a further 10 minutes.
  7. Serve with the remaining sauce drizzled over, along with a sprinkling of sesame seeds and sushi ginger.
