Potato Salad
Japanese Potato Salad features fresh flavours and a delightfully creamy texture.

Ingredients
- 500 Potatoes
- 1 Carrot
- 1/2 Cucumber
- 1/4 Onion
- 2 Boiled Egg
- 100g Ham
- 150g Mayonnaise
- 1 Tbsp Yutaka Rice Vinegar
- 1 Tsp Sugar
- Salt & Pepper
Directions
- Chop your Potatoes, Carrot, Cucumber and Onion.
- Boil the chopped Potatoes and Carrot in a pot of salted water until tender, about 10-12 minutes.
- Drain and transfer to a large bowl. Mash the potatoes lightly, leaving some chunks.
- While the potatoes and carrot are cooking, sprinkle the Cucumber and Onion slices with a little Salt and let them sit for 10 minutes.
- Add the Cucumber, Onion, Boiled Eggs, and Ham to the bowl with the potatoes and carrot.
- In a seperate bowl, mix the Mayonnaise, Rice Vinegar, and Sugar.
- Add the mayonnaise mixture to the salad and gently mix until well combined.
- Season with Salt and Black Pepper to taste.
