Potato Salad

Japanese Potato Salad features fresh flavours and a delightfully creamy texture.

Ingredients

  • 500 Potatoes
  • 1 Carrot
  • 1/2 Cucumber
  • 1/4 Onion 
  • 2 Boiled Egg 
  • 100g Ham
  • 150g Mayonnaise
  • 1 Tbsp Yutaka Rice Vinegar
  • 1 Tsp Sugar
  • Salt & Pepper 

Directions

  1. Chop your Potatoes, Carrot, Cucumber and Onion.
  2. Boil the chopped Potatoes and Carrot in a pot of salted water until tender, about 10-12 minutes.
  3. Drain and transfer to a large bowl. Mash the potatoes lightly, leaving some chunks.
  4. While the potatoes and carrot are cooking, sprinkle the Cucumber and Onion slices with a little Salt and let them sit for 10 minutes.
  5. Add the Cucumber, Onion, Boiled Eggs, and Ham to the bowl with the potatoes and carrot.
  6. In a seperate bowl, mix the Mayonnaise, Rice Vinegar, and Sugar.
  7. Add the mayonnaise mixture to the salad and gently mix until well combined.
  8. Season with Salt and Black Pepper to taste.
