Ingredients
- 1 medium carrot (about 100g) peeled and roughly chopped
- 1 tbsp Yutaka White Miso Paste
- 1 tbsp Yutaka rice vinegar
- 1 tbsp Yutaka soy sauce
- 1 tsp sesame oil
- 1 tsp Yutaka mirin
- 1 small garlic clove, peeled
- 1 tsp ginely grated fresh ginger
- 2 tbsp vegetable oil
- 2 tbsp cold water (more if needed)
Directions
- Place the carrot, miso, rice vinegar, soy sauce, sesame oil, mirin, garlic and ginger in a blender or food processor.
- Blitz until the carrot is finely chopped and the mixture begins to emulsify.
- Slowly add the vegetable oil while blending until smooth and creamy.
- Add water, 1 tbsp at a time, to loosen the dressing to your desired consistency.
- Taste and adjust seasoning if needed.
- Spoon over salads, gain bowls or grilled veg. Keep refrigerated and use within 5 days.
