Sesame Japanese Cucumber Salad

Ingredients

  • 2 Large cucumbers
  • 1 tbsp Yutaka White Sesame Seeds
  • 1 Spring Onion, thinly sliced
For the sesame dressing:
  • 4 tbsp mayonnaise
  • 1.5 tbsp Yutaka Rice Vinegar
  • 3 tbsp coconut aminos
  • 1/2 to 1 toasted sesame oil
  • 2 tsp tahini

Directions

  1. Using a spiralizer or vegetable peeler, create long thin strips of cucumber. If you prefer, you can slice the cucumber into thin rounds instead.
  2. In a small bowl, whisk together the mayonnaise, rice vinegar, coconut aminos, toasted sesame oil, and tahini until smooth and well combined.
  3. Toss the cucumber strips in the sesame dressing, making sure they are evenly coated.
  4. Garnish with toasted sesame seeds and sliced spring onion. Serve immediately or chill for a refreshing side salad.
