Ingredients
- 2 Large cucumbers
- 1 tbsp Yutaka White Sesame Seeds
- 1 Spring Onion, thinly sliced
- 4 tbsp mayonnaise
- 1.5 tbsp Yutaka Rice Vinegar
- 3 tbsp coconut aminos
- 1/2 to 1 toasted sesame oil
- 2 tsp tahini
Directions
- Using a spiralizer or vegetable peeler, create long thin strips of cucumber. If you prefer, you can slice the cucumber into thin rounds instead.
- In a small bowl, whisk together the mayonnaise, rice vinegar, coconut aminos, toasted sesame oil, and tahini until smooth and well combined.
- Toss the cucumber strips in the sesame dressing, making sure they are evenly coated.
- Garnish with toasted sesame seeds and sliced spring onion. Serve immediately or chill for a refreshing side salad.
