Ingredients
- 1 Butternust Squash
- 4 Tsp Yutaka White Miso Paste
- 2 Tbsp Oil
- 3 Cherry Tomatoes
- 1 Celery Stalk
- 1 Red Pepper
- 1/2 Tsp Parsley
- 1 Tbsp Yutaka Rice Vinegar
Directions
- Chop your butternut squash in half and scoop the seeds out the middle. Finely chop the cherry tomatoes, celery and red pepper.
- Mix together 1 tbsp oil and 2 tbsp miso paste - brush the inside of the squash with the mixture.
- Put the squash on a baking tray and cook for half an hour.
- Mix together the rest of the miso paste, tomatoes, celery, pepper and parsley in a bowl and set aside.
- Once the squash is cooked, filled the middle with the salsa and serve.
