Ingredients
- 1 medium aubergine, cut into thin strips
- 1 tbsp Yutaka White Miso Paste
- 1 tsp Yutaka Soy Sauce
- 1 tsp Yutaka Mirin
- 1 tsp Honey
- 1/2 tsp Yutaka Toasted Sesame Oil
- 1 tsp vegetable oil
- 1/2 cucmber, peeled into ribbons
- 2 spring onions, finely sliced
- 4 small soft tortillas
- 1 tsp sesame seeds, toasted (optional)
Directions
- In a small bowl, mix the miso paste, soy sauce, mirin, honey and sesame oul until smooth.
- Heat vegetable oil in a frying pan over medium heat. Add the aubergine strips and cook for 4-5 minutes until beginning to soften.
- Add the miso glaze to the pan and cook for a further 3-4 minutes, turning the aubergine to coat and caramelise.
- Warm the tortillas in a dry pan or low oven.
- Fill each tortilla with glazed aubergine, cucmber ribbons and spring onion.
- Sprinkle with sesame seeds and serve warm.
