Miso Glazed Aubergine Tacos

Ingredients

  • 1 medium aubergine, cut into thin strips
  • 1 tbsp Yutaka White Miso Paste
  • 1 tsp Yutaka Soy Sauce
  • 1 tsp Yutaka Mirin
  • 1 tsp Honey
  • 1/2 tsp Yutaka Toasted Sesame Oil
  • 1 tsp vegetable oil
  • 1/2 cucmber, peeled into ribbons
  • 2 spring onions, finely sliced
  • 4 small soft tortillas
  • 1 tsp sesame seeds, toasted (optional)

Directions

  1. In a small bowl, mix the miso paste, soy sauce, mirin, honey and sesame oul until smooth.
  2. Heat vegetable oil in a frying pan over medium heat. Add the aubergine strips and cook for 4-5 minutes until beginning to soften.
  3. Add the miso glaze to the pan and cook for a further 3-4 minutes, turning the aubergine to coat and caramelise.
  4. Warm the tortillas in a dry pan or low oven.
  5. Fill each tortilla with glazed aubergine, cucmber ribbons and spring onion.
  6. Sprinkle with sesame seeds and serve warm.
