Vegan Maki Rolls

Ingredients

  • 200g Yutaka Sushi Rice
  • 2 tbsp Yutaka Rice Vinegar
  • 1 tsp sugar
  • 1/2 tsp salt
  • 4 sheets Yutaka Nori
  • 1 block (300g) firm tofu, sliced into strips
  • 1 tbsp Yutaka Soy Sauce
  • 1 tsp sesame oil
  • 1 tbsp cornstarch
  • 1/2 cucumber, cut into thin strips
  • 1/2 red pepper, cut into thin strips 

Directions

  1. Cook the rice according to packet instructions. Once cooked, transfer to a large bowl and let cool slightly. Mix the rice vinegar, sugar, and salt, then gently fold it into the rice.
  2. Toss the tofu strips in soy sauce, sesame oil, and cornstarch until evenly coated. Heat a non-stick pan over medium heat and fry the tofu strips until golden and crispy. Set aside to cool.
  3. Place a sheet of nori shiny side down on a bamboo sushi mat. Spread a thin layer of rice evenly over the nori, leaving a 2cm border at the top edge.
  4. Arrange a strip of crispy tofu, cucumber, and red pepper across the middle of the rice.
  5. Using the sushi mat, roll the nori tightly over the filling, pressing gently to shape the roll. Seal th eedge with a little water.
  6. Repeat with the remaining nori, rice, and fillings. Use a sharp knife to slice each roll into bite-sized pieces.
