Ingredients
- 2 Tbsp Sesame Oil
- 2 Shallots
- 4cm Ginger
- 15cm Lemongrass
- 2L Chicken Stock
- 300g Cooked King Prawns
- 180g Yutaka Soba Noodles
- 2 Tbsp Yutaka Soy Sauce
- 1 Tbsp Yutaka Mirin
- 1 Tbsp Yutaka Rice Vinegar
- 1 Tsp Sesame Seeds
- Chilli and Spring Onion to garnish
Directions
- Heat your sesame oil in a large saucepan, then add your shallots and ginger and cook for 3-4 minutes.
- Next pour in the stock and add the lemongrass- bring to the boil. Reduce the heat and simmer for a further half an hour.
- Add the noodles, soy sauce, mirin, rice vinegar and prawns. Stir well for a couple of minutes before dividing into bowls and garnishing with sesame seeds and spring onion.
