Ingredients
- 200g Yutaka Sushi Rice
- 1 tbsp rice vinegar
- 1/2 tsp sugar
- 1/4 tsp salt
- 2 salmon fillets (approx. 250g), skin removed
- 1 tsbp Yutaka Soy Sauce
- 1 tbsp mayonnaise
- 1 tsp Sriracha (optional)
- 1 sheet Yutaka Sushi Nori, cut into small squares
- 1 tbsp chives, finely chopped
Directions
- Rinse the sushi rice under cold water until the water until the water runs clear. Cook according to packet instructions. Stir in rice vinegar, sugar and salt. Set aside to cool slightly.
- Preheat oven 200°C (180°C fan). Line a muffin tin with small squares of nori and press in spoonfuls of sushi rice to form cups.
- Dice the salmon and mix with soy sauce, mayonnaise and sriracha if using.
- Spoon the salmon mixture into the rice cups. Bake for 12-15 minutes until the salmon is just cooked and the edges of the nori are crisp.
- Remove from the tin and garnish with chopped chives to serve.
