Salmon with a Soy Salmon Dressing

Ingredients

  • 2 British Salmon fillets (around 150g each)
  • 1 tbsp vegetable oil
  • 200ml fish stock
  • 1 tbsp Yutaka Soy sauce
  • 1 tbsp Lime juice
  • 1 tsp Yutaka Mirin
  • 1 tsp Yutaka Cooking Sake
  • 1 tsp Honey
  • 1 small garlic clove
  • 1 small garlic clove
  • 1 small piece of fresh ginger
  • 2 spring onions, thinly sliced (optional, for garnish)
  • Lime wedges (optional, for serving)

Directions

  1. Rinse the salmon fillets under cold water and pat dry with paper towels. Season lightly with salt and set aside.
  2. In a small bowl, whisk together the soy sauce, lime juice, mirin, sake, honey, minced garlic, and grated ginger until well combined.
  3. Heat the vegetable oil in a large skillet or pan over medium heat. Add the fish stock (or water) and bring it to a gentle simmer. Add the salmon fillets, skin side down, and poach for 8-10 minutes, or until the salmon is cooked through and flakes easily with a fork.
  4. Carefully remove the salmon fillets from the poaching liquid and set them on a plate to rest for a few minutes.
  5. Drizzle the soy and lime dressing over the poached salmon fillets. Garnish with thinly sliced spring onions and lime wedges, if desired.
