Soy and Honey Chicken Traybake

A combination of sweetness and umami for an easy and fuss free delicious dinner.

Ingredients

  • 4 Chicken Legs
  • 2 Tbsp Honey
  • 2 Tbsp Yutaka Soy Sauce
  • 2 Cloves of Chopper Garlic
  • 1 Tbsp Grated Ginger
  • 300g Green Beans
  • 2 Bell Peppers
  • 1 Red Onion
  • 2 Tbsp Vegetable Oil
  • Salt & Pepper

Directions

  1. In a small bowl, whisk together the honey, soy sauce, garlic, grated ginger, and 1 tablespoon of vegetable oil. This mixture will be used to marinate the chicken.
  2. Place the chicken thighs in a large bowl or a resealable plastic bag. Pour the marinade over the chicken and make sure each piece is coated evenly. Let the chicken marinate for at least 15-20 minutes in the fridge
  3. In a separate large mixing bowl, combine the sliced bell peppers and green beans. Drizzle with a tablespoon of vegetable oil, and season with salt and black pepper. Toss the vegetables to coat them evenly with the oil seasoning.
  4. Spread the marinated chicken thighs out in a single layer on a large baking tray.
  5. Next, spread the seasoned vegetables around the chicken on the same tray, making sure they're in an even layer.
  6. Place the tray in the preheated oven and bake for about 45 minutes, baste the chicken every 15 minutes with the remaining marinade.
  7. Remove from the oven and enjoy!
