Ingredients
- 1x400g tin chickpeas, drained
- 2 tbsp tahini
- 1 garlic clove, crushed
- 1 tsbp lemon juice
- 2 tbsp cold water
- Salt, to taste
- 1 tbsp Yutaka Soy Sauce
- 1 tsp Yutaka Yuzu Sauce
- 1/2 tsp chilli oil (or to taste)
- 2 tbsp cooked soybeans (optional, for topping)
- 1/4 cucmber, finely chopped
- 1 tsp sesame seeds, toasted
- Crackers or warm flatbread, to serve
Directions
- In a blender, combine chickpeas, tahini, garlic, lemon juice, water and a pinch of salt. Blend until smooth and creamy, adding a little more water if needed.
- In a small bowl, mix the soy sauce, yuzu juice and chilli oil to make a spicy citrus dressing.
- Spoon the hummus onto a serving plate and swirl to create a shallow dip.
- Drizzle over the spicy yuzu soy dressing, then top with cooked soybeans, cucumber, spring onion and sesame seeds.
- Serve with crackers or flatbread for dripping.
