Sushi Bento Box

This recipe is a lunch box idea, that's not only cute, but healthy as well.

Ingredients

serves 2

  • 600g Prepared Cooked Sushi Rice
  • 90ml sushi vinegar
  • 3 tbsp sugar
  • 1 tsp salt
  • Toppings:
  • 80g smoked salmon
  • 16 steamed prawn
  • 4 crab meat sticks
  • ½ avocado
  • 1 stem of dill
  • egg omelette
  • 2 red radishes
  • 1g shredded nori
  • Serve with:
  • Pickled ginger
  • Wasabi
  • Soysauce 

Directions

To make the sushi rice: 

  1. Wash the 3 cup (600ml) of rice in a strainer under running water, mixing with your hands until the water runs clear. Leave to drain for 30 mins.
  2. Add the rice to a heavy saucepan. Add 720ml water then put the lid on. Bring to the boil on high heat. When the rice starts to boil, reduce to low heat and simmer for 15 mins. Remove from the heat. Leave to rest for 10 mins. Do not remove the lid until after the rice has rested.
  3. Once the rice is cooked, wet the inner surface of a large bowl - to prevent the rice from sticking - and then transfer the rice inside. Pour the sushi vinegar over the rice and gently stir in, taking care not to break the rice grains. Allow the rice to cool down for 10-15 mins.

To decorate the sushi rice:

  1. Slice the avocado, red radishes thinly, cut the smoked salmon, crab sticks, and omelette into fine sticks.

  2. Place the sushi rice, then press the sushi rice into the bento box.

  3. Sprinkle the nori, then place the sushi rice on top of it.

  4. Decorate the toppings into stripy pattern on the top of sushi rice.

  5. Garnish with the dill, serve with the gari (pickled ginger), wasabi, and soy sauce.
