Yaki Onigiri Chazuke
A traditional Japanese dish where a crispy, grilled rice ball is immersed in warm green tea "Yaki Onigiri" refers to the grilled rice ball, while "chazuke" translates to "submerged in tea" or "tea bath", highlighting the rice soaking in the fragrant green tea broth.

Ingredients
- 180g cooked Yutaka Sushi Rice
- 1 tbsp Yutaka Soy Sauce
- 1 tsp Yutaka Mirin
- 1/2 tsp sesame oil
- Vegetable oil, for grilling
- 1 tsp Yutaka White Sesame Seefs
- 1 spring onion, finely sliced
- 2 cups hot Japanese green tea
- Yutaka Sushi Ginger, to serve (optional)
- Yutaka Wasabi to serve (optional)
Directions
- While the rice is still warm, shape it into 4 compact trianglular onigiri using damp hands.
- In a small bow, mix soy sauce, mirin and sesame oil.
- Brush the onigiri lightly with vegetable oil. Grill in a non-stick pan or on a griddle over medium heat for 2-3 minutes per side until golden and crisp.
- Brush the soy sauce mixture onto each side and continue grilling for another 1-2 minutes until caramelised.
- Place 1-2 yaki onigiri in a shallow bowl. Sprinkle with sesame seeds.
- Pour over hot green tea or dashi broth to just cover the base of the rice.
- Top with spring onion and serve immediately with sushi ginger, pickles or a dab of wasabi on the side.
