Wasabi Soy Salmon with Pickled Cucumber

Ingredients
- 4 Salmon Fillets
- 3 Tbsp Yutaka Soy Sauce
- 1 Tbsp Yutaka Mirin
- 1/2 Tsp Yutaka Wasabi Paste
- 2cm Ginger
- 1 Tsp Honey
- 3 Tbsp Yutaka Rice Vinegar
- 1 Tsp Sugar
- 1 Cucumber
- 2 Spring Onions
- 1 Tsp Yutaka Sesame Seeds
Directions
- Chop your spring onion and grate the ginger. Slice the cucumber into ribbons.
- Mix the soy sauce, mirin, wasabi paste, ginger and honey together in a bowl.
- Add the ssalmon to the mixture and coat in it.
- Put the bowl in the fridge for at least half an hour.
- Put the cucumber, spring onion and sesame seeds in a bowl - toss with the vinegar and sugar.
- Cook the salmon in the oven according to packet instructions.
- Once cooked, serve on top of the cucumber mixture.
