Wasabi Soy Salmon with Pickled Cucumber

  • 4 Salmon Fillets
  • 3 Tbsp Yutaka Soy Sauce
  • 1 Tbsp Yutaka Mirin
  • 1/2 Tsp Yutaka Wasabi Paste
  • 2cm Ginger
  • 1 Tsp Honey
  • 3 Tbsp Yutaka Rice Vinegar
  • 1 Tsp Sugar
  • 1 Cucumber 
  • 2 Spring Onions
  • 1 Tsp Yutaka Sesame Seeds


  1. Chop your spring onion and grate the ginger. Slice the cucumber into ribbons.
  2. Mix the soy sauce, mirin, wasabi paste, ginger and honey together in a bowl.
  3. Add the ssalmon to the mixture and coat in it.
  4. Put the bowl in the fridge for at least half an hour.
  5. Put the cucumber, spring onion and sesame seeds in a bowl - toss with the vinegar and sugar.
  6. Cook the salmon in the oven according to packet instructions.
  7. Once cooked, serve on top of the cucumber mixture.
