Ingredients
- 150g Yutaka Sushi Rice
- 300g ground chicken
- 2 tbsp barbecue sauce
- 1 tbsp Yutaka Soy Sauce
- 50g frozen peas
- 50g sweetcorn
- 2 spring onions, finely sliced
- 1 tbsp vegetable oil
- Salt and pepper, to taste
Directions
- Rinse the sushi rice under cold eater until the water runs clear. Cook according to packet intructions and set aside to cool slightly.
- Heat vegetable oil in a frying pan over medium heat. Add the ground chicken and cook for 5-6 minutes. breaking it up with a spatula, until browned and cooked through.
- Stir in the barbecue sauce and soy sauce. Add the peas and corn, and cook for 2-3 more minutes until heated through. Season to taste with salt and pepper.
- Divide the rice between bowls and spoon the chicken mixture over the top.
- Garnish with sliced spring onions and serve hot.
