Ingredients

  • 150g Yutaka Sushi Rice
  • 300g ground chicken
  • 2 tbsp barbecue sauce
  • 1 tbsp Yutaka Soy Sauce
  • 50g frozen peas
  • 50g sweetcorn
  • 2 spring onions, finely sliced
  • 1 tbsp vegetable oil
  • Salt and pepper, to taste

Directions

  1. Rinse the sushi rice under cold eater until the water runs clear. Cook according to packet intructions and set aside to cool slightly.
  2. Heat vegetable oil in a frying pan over medium heat. Add the ground chicken and cook for 5-6 minutes. breaking it up with a spatula, until browned and cooked through.
  3. Stir in the barbecue sauce and soy sauce. Add the peas and corn, and cook for 2-3 more minutes until heated through. Season to taste with salt and pepper.
  4. Divide the rice between bowls and spoon the chicken mixture over the top.
  5. Garnish with sliced spring onions and serve hot.
