Mirin Salmon

Ingredients

  • 2 British salmon fillets (around 150g each)
  • 2 tbsp Yutaka Mirin
  • 1 tbsp Yutaka Soy Sauce
  • 1 tbsp Yutaka Cooking Sake
  • 1 tbsp honey
  • 1 tbsp vegetable oil
  • 1 small garlic clove, minced
  • 1 small piece of fresh ginger, grated
  • 1/2 lemon, thinly slliced
  • Fresh coriander or spring onions, finely chopped (optional for garnish)

Directions

  1. In a bowl, whisk together the mirin, soy sauce, sake, honey, minced garlic, and grated ginger until well combined.
  2. Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for 15-30 minutes, turning the fillets halfway through to ensure even coating.
  3. Heat the vegetable oil in a large non-stick skillet over medium heat. Remove the salmon from the marinade, allowing excess marinade to drip off, and place the fillets in the skillet, skin side down. Reserve the marinade.
  4. Cook the salmon for 4-5 minutes on each side, or until the skin is crispy and salmon is cooked through. Add the reserved marinade to the skillet during the last minute of cooking and let it reduce slightly, basting the salmon fillets.
  5. Remove the salmon from the skillet and transfer to a serving plate, Garnish the lemon slices and sprinkle with fresh coriander or spring onions, if desired.
