Ingredients
- 180g Yutaka Soba Noodles
- 1 small cucumber, finely sliced into matchsticks
- 1 medium carrot, peeled and grated
- 4 radishes, finely sliced
- 1 spring onion, finely sliced
- 1 tbsp Yutaka Sesame Seeds, toasted
- A handful of fresh coriander leaves (optional)
- 2 tbsp Yutaka Soy Sauce
- 1 tbsp Yutaka Rice Vinegar
- 1 tbsp Yutaka Mirin
- 1 tsp Yutaka Toasted Sesame Oil
- 1 tsp finely grated fresh ginger
- 1 tsp honey
Directions
- Cook the soba noodles in boiling water according to packet instructions. Drain and rinse well under cold running water to cool completely.
- In a small bowl, whisk together the soy sauce, rice vinegar, mirin, sesame oil, ginger and honey. Set aside.
- In a large bowl, combine the cooled soba noodles with cucumber, carrot, radish and spring onion.
- Pour over the dressing and toss to coat everything evenly.
- Transfer to serving bowls and scatter over sesame seeds and coriander leaves to serve.
