Soba Noodle Salad

Ingredients

  • 180g Yutaka Soba Noodles
  • 1 small cucumber, finely sliced into matchsticks
  • 1 medium carrot, peeled and grated
  • 4 radishes, finely sliced
  • 1 spring onion, finely sliced
  • 1 tbsp Yutaka Sesame Seeds, toasted
  • A handful of fresh coriander leaves (optional)
For the dressing:
  • 2 tbsp Yutaka Soy Sauce
  • 1 tbsp Yutaka Rice Vinegar
  • 1 tbsp Yutaka Mirin
  • 1 tsp Yutaka Toasted Sesame Oil
  • 1 tsp finely grated fresh ginger
  • 1 tsp honey

Directions

  1. Cook the soba noodles in boiling water according to packet instructions. Drain and rinse well under cold running water to cool completely.
  2. In a small bowl, whisk together the soy sauce, rice vinegar, mirin, sesame oil, ginger and honey. Set aside.
  3. In a large bowl, combine the cooled soba noodles with cucumber, carrot, radish and spring onion.
  4. Pour over the dressing and toss to coat everything evenly.
  5. Transfer to serving bowls and scatter over sesame seeds and coriander leaves to serve.
