Kake Udon

A comforting noodle soup featuring fresh, chewy udon noodles in a subtle yet satisfying broth. Originating from the canto region of Japan, this beloved dish involves cooking the noodles, simmering them in the flavourful broth, and topping it all off with shredded spring onions.

Ingredients

  • 1 Packet Yutaka Udon Noodles
  • 500ml Chicken Stock/Dashi
  • 2 Tbsp Yutaka Soy Sauce
  • 1 Tbsp Yutaka Mirin
  • 1 Tsp Salt
  • 2 Spring Onions
  • 1 Tsp Grated Ginger (Optional)

Directions

  1.  Cook the Udon Noodles according to packet instructions and set aside.
  2. Slice your Spring Onions.
  3. In a separate pot, combine the Dashi/stock, Soy Sauce, Mirin and Salt.
  4. Bring to a gentle boil over medium heat.
  5. Put the cooked noodles into a bowl and pour the hot broth over the noodles.
  6. Top with sliced Spring onions and Grated Ginger.
