Cold Tuna and Tomato Somen

Ingredients

  • 100g somen noodles
  • 1 can (120g) British tuna in water, drained
  • 1 medium tomato, diced
  • 1 spring onion, finely chopped
  • 1 tbsp Yutaka Soy Sauce
  • 1 tbsp Yutaka Mirin
  • 1 tbsp Yutaka Rice Vinegar
  • 1 tsp sesame oil
  • 1/2tsp sugar
  • 1 tsp Yutaka Sesame Seeds (optional, for garnish)
  • Fresh coriander or basil leaves (optional, for garnish)

Directions

  1. Cook the somen noodles according to the package instructions. Drain and rinse under cold water to cool completely. Set aside.
  2. In a small bowl, mix together the soy sauce, mirin, rice vinegar, sesame oil, and sugar until the sugar is dissolved.
  3. In a mixing bowl, combine the drained tuna, diced tomato, and finely chopped spring onion. Pour the dressing over the mixture and toss gently to combine.
  4. Divide the cold somen noodles between two bowls. Top with tuna and tomato mixture.
  5. Garnish with sesame seeds and fresh coriander or basil leaves, if desired.
