Mentaiko Udon

Ingredients

  • 1 Pack Yutaka Udon Noodles
  • 1 tbsp vegetable oil
  • 1 small garlic clove, minced
  • 2 tbsp mentaiko (spicy cod roe)
  • 1 cod fillet
  • 1 tbsp Yutaka Soy Sauce
  • 1 tbsp Yutaka Mirin
  • 1 tsp Yutaka Rice Vinegar
  • 1 small spring onion, finely sliced (optional, for garnish)
  • 1 tsp Yutaka Sesame Seeds (optional, for garnish)
  • Fresh coriander or basil leaves (optional, for garnish)
  • Salt and pepper, to taste

Directions

  1. Cook the udon noodles according to the package intructions. Drain and set aside.
  2. Cook the cod according to packet instructions.
  3. Heat the vegetable oil in a large skillet or wok over medium heat. Add the minced garlic and saute for 1 minutes until fragrant.
  4. Add the mentaiko to the skillet and cook for 1-2 minutes, stirring frequently, until the roe is slightly cooked and aromatic.
  5. Stir in the soy sauce, mirin, and rice vinegar, and cook for an additional 1 minute.
  6. Add the cooked udon noodles to the skillet and toss to coat them evenly with the mentaiko sauce. Cook for another 2 minutes, or until the noodles are heated through.
  7. Season with salt and pepper to taste.
  8. Serve hot garnish with sliced spring onions, sesame seeds, and fresh coriander or basil leaves, if desired.
