Soba Noodles with Mango and Aubergine

Ingredients
- 1 Mango
- 1 Aubergine
- 1 Pack Yutaka Soba Noodles
- 1 Packet Tofu
- 1 Red Onion
- 2 Radishes
- 1 Bunch Basil
- 1 Bunch Coriander
- 1 Tbsp Yutaka Rice Vinegar
- 1 Tsp Yutaka Soy Sauce
- 3 Garlic Cloves
- 1/2 Tsp Chilli Flakes
- 1 Tsp Oil
- 1 Lime
Directions
- Chop your mango, aubergine, onion, radishes, tofu, garlic, basil and coriander.
- Cook your noodles according to the packet instructions.
- Fry the aubergine on a medium-high heat whilst the noodles are cooking for around 6 minutes.
- Add the rice vinegar, soy sauce, garlic, chilli flakes and oil to a bowl and mix well.
- Once the noodles are done, combine with the mango, aubergine, tofu, radishes and the mixture from the bowl.
- Garnish with lime juice, coriander and basil.
