Soba Noodles with Mango and Aubergine

Ingredients

  • 1 Mango
  • 1 Aubergine
  • 1 Pack Yutaka Soba Noodles
  • 1 Packet Tofu
  • 1 Red Onion
  • 2 Radishes
  • 1 Bunch Basil
  • 1 Bunch Coriander
  • 1 Tbsp Yutaka Rice Vinegar
  • 1 Tsp Yutaka Soy Sauce
  • 3 Garlic Cloves
  • 1/2 Tsp Chilli Flakes
  • 1 Tsp Oil
  • 1 Lime

Directions

  1. Chop your mango, aubergine, onion, radishes, tofu, garlic, basil and coriander.
  2. Cook your noodles according to the packet instructions.
  3. Fry the aubergine on a medium-high heat whilst the noodles are cooking for around 6 minutes.
  4. Add the rice vinegar, soy sauce, garlic, chilli flakes and oil to a bowl and mix well.
  5. Once the noodles are done, combine with the mango, aubergine, tofu, radishes and the mixture from the bowl.
  6. Garnish with lime juice, coriander and basil.
