Ingredients
- 1 Pack Yutaka Udon Noodles
- 300g Cooked King Prawns
- 1 Onion
- 2 Garlic Cloves
- 1 Tsp Chilli Flakes
- 1 Tbsp Olive Oil
- 1 Handful Fresh Coriander
- 1 Tbsp Yutaka Soy Sauce
- 2 Tbsp Fish Sauce
- 600ml Chicken Stock
- 200g Spinach
Directions
- Chop your onion, garlic and coriander (separating the leaves and stalks).
- Heat your olive oil in a frying pan and add the onion-cook for 6 minutes on a medium heat. Next add garlic and chilli flakes-cook for a further 3 minutes.
- Add your coriander stalks, stock and fish sauce simmer for 12 minutes.
- Boil some water and cook the udon noodles for 4 muntes.
- Add you prawns and spinach to the simmering soup.
- Divide the noodles into bowls and pour the soup on top.
- Garnish with coriander leaves and soy sauce to taste.
