Prawn Noodle Soup

Ingredients

  • 1 Pack Yutaka Udon Noodles
  • 300g Cooked King Prawns
  • 1 Onion
  • 2 Garlic Cloves
  • 1 Tsp Chilli Flakes
  • 1 Tbsp Olive Oil
  • 1 Handful Fresh Coriander
  • 1 Tbsp Yutaka Soy Sauce
  • 2 Tbsp Fish Sauce
  • 600ml Chicken Stock
  • 200g Spinach

Directions

  1. Chop your onion, garlic and coriander (separating the leaves and stalks).
  2. Heat your olive oil in a frying pan and add the onion-cook for 6 minutes on a medium heat. Next add garlic and chilli flakes-cook for a further 3 minutes.
  3. Add your coriander stalks, stock and fish sauce simmer for 12 minutes.
  4. Boil some water and cook the udon noodles for 4 muntes.
  5. Add you prawns and spinach to the simmering soup.
  6. Divide the noodles into bowls and pour the soup on top.
  7. Garnish with coriander leaves and soy sauce to taste.
