BIbim Guksu

A popular Korean cold noodle dish known for its refreshing and spicy flavours. The combo of chewy noodles, crisp vegetables, and flavourful sauce makes it a light yet fulfilling meal, perfect for those warmer days.

Ingredients

  • 200g Yutaka soba noodles
  • 2 large eggs
  • 1 cucumber, julienned
  • 1 small carrot, julienned
  • 2 spring onions, finely sliced
  • 1 tbsp Yutaka sesame seeds
  • 2 tbsp gochujang
  • 1 tbsp Yutaka soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp Yutaka rice vinegar
  • 1 tbsp sugar
  • 1 garlic clove (minced)
  • 1 tsp chilli oil 

Directions

  1. Cook the noodles according to package instructions (usually 3-4 minutes). Once cooked, drain and rinse under cold water- set aside.
  2. While the noodles are cooking, place the eggs in a small pot and cover them with water. Bring to a boil, then reduce the heat and simmer for 7-8 minutes for a slightly soft yolk, or 9-10 minutes for a firmer yolk. Once done, transfer the eggs to a bowl of cold water to cool, then peel and slice in half. 
  3. In a bowl, mix together the gochujang, soy sauce, sesame oil, rice vinegar, sugar, and garlic. If you like it spicier, add the chilli oil too. Stir until the sauce is smooth and well combined.
  4. In a large bowl, combine the cold noodles with the sauce, tossing until the noodles are evenly coated. Add the julienned cucumber, carrot, and sliced spring onions, and mix everything together.
  5. Divide the noodles between two bowls. Top each with a boiled egg half and sprinkle with sesame seeds for garnish.
