Garlic Onion Chicken

Ingredients

  • 300g chicken thighs
  • 1 tbsp vegetable oil
  • 1 small onion, finely sliced
  • 3 cloves garlic, minced
  • 2 tbsp Yutaka Soy Sauce
  • 1 tbsp Yutaka Mirin
  • 1 tbsp Yutaka Cooking Sake
  • 1 tsp sugar
  • 1 1/2 tsp sesame oil
  • 150g Yutaka Sushi Rice
  • 300ml water
  • 50g mixed salad leaves
  • 1 small cucumber, sliced thinly
  • 4-5 radishes, thinly sliced
  • 1 tbsp Yutaka Rice vinegar

Directions

  1. Rinse the rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to instructions. once cooked, let it rest for 10 minutes before fluffing with a fork.
  2. In a large frying pan, heat the vegetable oil over medium heat.
  3. In a small bowl, mix the soy sauce, mirin, sake, sugar and sesame oil. Add the chicken to the pan and cook for 10-15 minutes, stirring occasionally, unil the chicken is cooked through and slightly browned. Pour the sauce over the chicken, stirring to coat. Let it cook for another 1-2 minutes unilt the sauce thickens slightly.
  4. Add the sliced onion and saute for 3-4 minutes until softened. Add the garlic and cook for an additional 1-2 minutes until fragrant.
  5. In a bowl, toss the salad leaves, cucumber, and radishes. In a seperate small bowl, whisk together the rice vinegar, soy sauce, and sesame oil. Drizzle the dressing over the salad just before serving.
  6. Serve the garlic onion chicken over a bed of rice, accompanied by the side salad. Enjoy!
