Miso stir-fried pork and aubergine
A hearty and easy to make weekday dish full of flavour. A great combination of pork and aubergine coated with a wonderfully savoury miso sauce.

Ingredients
Serves 1-2
- 1 aubergine
- 2 leeks
- 1 spring onion
- 1 clove of garlic
- 1 knob of ginger
- 1 tbsp vegetable oil
- 1 pork shoulder steak thinly sliced
- 2 tbsp miso (adjust depending on saltiness of miso)
- 2 tsp sugar
- 1 tbsp mirin
- 1 tbsp cooking sake
- 1 tbsp soy sauce
- 2 tbsp water
- 2 servings of cooked Japanese rice
Directions
- In a small bowl mix all the sauce ingredients until the miso has dissolved.
- Cut aubergine into small chunks and soak in water to prevent discolouration.
- Slice the leeks diagonally into 1 cm slices.
- Slice ginger and garlic thinly.
- Add oil to the frying pan over a medium heat and gently cook ginger and garlic until aromatic.
- Add leek and pork. Add the aubergine just before the pork has been cooked through. Stir fry until aubergine is slightly tender.
- Add the sauce and reduce the heat to medium-low.
- Cover with lid and cook for another 5 mins and if needed add a splash of water if there is no steam.
- Once the aubergine has cooked through it is ready to serve.
- Place on top of a bowl of rice and garnish with sliced spring onion.
