Miso stir-fried pork and aubergine

A hearty and easy to make weekday dish full of flavour. A great combination of pork and aubergine coated with a wonderfully savoury miso sauce.

Ingredients

Serves 1-2

  • 1 aubergine
  • 2 leeks
  • 1 spring onion
  • 1 clove of garlic
  • 1 knob of ginger
  • 1 tbsp vegetable oil
  • 1 pork shoulder steak thinly sliced
Sauce:
  • 2 tbsp miso (adjust depending on saltiness of miso)
  • 2 tsp sugar
  • 1 tbsp mirin
  • 1 tbsp cooking sake
  • 1 tbsp soy sauce
  • 2 tbsp water
  • 2 servings of cooked Japanese rice

Directions

  1. In a small bowl mix all the sauce ingredients until the miso has dissolved.
  2. Cut aubergine into small chunks and soak in water to prevent discolouration.
  3. Slice the leeks diagonally into 1 cm slices.
  4. Slice ginger and garlic thinly.
  5. Add oil to the frying pan over a medium heat and gently cook ginger and garlic until aromatic.
  6. Add leek and pork. Add the aubergine just before the pork has been cooked through. Stir fry until aubergine is slightly tender.
  7. Add the sauce and reduce the heat to medium-low.
  8. Cover with lid and cook for another 5 mins and if needed add a splash of water if there is no steam.
  9. Once the aubergine has cooked through it is ready to serve.
  10. Place on top of a bowl of rice and garnish with sliced spring onion.
