Sake Poached Chicken with Soba Noodles

Ingredients

  • 125ml Sake
  • 60ml Yutaka Soy Sauce
  • 1 1/2 Tsp Caster Sugar
  • 270g Yutaka Soba Noodles 
  • 150g Shiitake Mushrooms
  • 500ml Chicken Breast 
  • 1 Bunch Bok Choy
  • 1 Sliced Red Chilli

Directions

  1. In a heatproof bowl, place the shiitake mushrooms and cover them with 500ml of hot water. Set aside for 5 minutes, then drain the mushrooms, making sure to reserve the mushroom liquid.
  2. Take a saucepan and combine the sake, soy sauce, sugar, chicken stock and the reserved mushroom liquid. Place it over medium heat and bring it to a simmer, stirring occasionally.
  3. Add the chicken to the simmering liquid, return to a simmer, and let it cook for 10 minutes. Flip the chicken over, add the boy choy, and cook for an additional 5-7 minutes until the chicken is thoroughly cooked.
  4. Once done, remove the chicken and bok choy from the saucepan, transfer them to a plate, and cover to keep them warm.
  5. Bring the broth back to a simmer, then add the noodles, enoki mushrooms, and shiitake mushrooms. Cook for about 7 minutes or until the noodles become tender.
  6. To serve, use tongs to divide the noodles among bowls. Shred the cooked chicken and place it on top of the noodles, along with the mushrooms, bok choy, and sliced red chilli.
  7. Finally, spoon the poaching broth into the bowls and enjoy!
