Sake Poached Chicken with Soba Noodles

Ingredients
- 125ml Sake
- 60ml Yutaka Soy Sauce
- 1 1/2 Tsp Caster Sugar
- 270g Yutaka Soba Noodles
- 150g Shiitake Mushrooms
- 500ml Chicken Breast
- 1 Bunch Bok Choy
- 1 Sliced Red Chilli
Directions
- In a heatproof bowl, place the shiitake mushrooms and cover them with 500ml of hot water. Set aside for 5 minutes, then drain the mushrooms, making sure to reserve the mushroom liquid.
- Take a saucepan and combine the sake, soy sauce, sugar, chicken stock and the reserved mushroom liquid. Place it over medium heat and bring it to a simmer, stirring occasionally.
- Add the chicken to the simmering liquid, return to a simmer, and let it cook for 10 minutes. Flip the chicken over, add the boy choy, and cook for an additional 5-7 minutes until the chicken is thoroughly cooked.
- Once done, remove the chicken and bok choy from the saucepan, transfer them to a plate, and cover to keep them warm.
- Bring the broth back to a simmer, then add the noodles, enoki mushrooms, and shiitake mushrooms. Cook for about 7 minutes or until the noodles become tender.
- To serve, use tongs to divide the noodles among bowls. Shred the cooked chicken and place it on top of the noodles, along with the mushrooms, bok choy, and sliced red chilli.
- Finally, spoon the poaching broth into the bowls and enjoy!
