Udon Noodle Soup

Ingredients

  • 1 Vegetable Stock Cube
  • 1L Water
  • 2 Tbsp Yutaka Soy Sauce
  • 2 Tbsp Yutaka Mirin
  • 1 Tbsp Yutaka Cooking Sake
  • 1 Tsp Sugar
  • 40g Yutaka Udon Noodles
  • 1 Tbsp Vegetable Oil
  • 140g Mushrooms
  • 2 Sliced Spring Onions
  • 200g Spinach

Directions

  1.  In a large pan, combine 1 litre of water with the stock cube and stir in the soy sauce, mirin, cooking sake and sugar until dissolved.
  2. As the soup base starts to boil, heat some oil in a frying pan. Saute the mushrooms over high heat for 2-3 minutes until golden.
  3. Add the spring onions and cook for additional minutes, then set the mixture aside.
  4. Once the soup base reaches a boil, add the noodles and cook for 4 minutes. Introduce the spinach into the pan and cook for an additional minute, until it wilts slightly.
  5. Now, stir in the sauteed mushrooms, spring onions, and season the soup to taste.
