When you have left over rice and vegetables in the fridge, this recipe is quick and simple meal, as side or starter.

Ingredients
- 250g Yutaka Premium Akitakomachi Rice
- 80g Daikon
- 1 Carrot
- 5 Shitaake Mushrooms
- 1 Spring Onion
- 800ml Stock or Dashi
- 2 tsp Yutaka Soy Sauce
- 1 Egg
Directions
- Chop the Daikon, Carrot, Shitaake mushrooms and spring onion.
- Add the dashi, Daikon and Carrot to a pan and bring to the boil.
- Add the Shitaake mushroom, Spring onion, Rice and Soy sauce and mix.
- Beat the egg and add in - once this has set, serve and enjoy!
