Ingredients
- 2 large cucumbers
- 1/2 tsp salt
- 8 Yutaka Gyoza, cooked
- 1 pack Yutaka Soba cooked and cooled
- 1 medium carrot, shredded
- 2 tsp Yutaka Sesame Seeds
- 1 tbsp Tahini
- 2 tbsp Yutaka Yuzu
- 1 tbsp Yutaka Soy Sauce
- 1 tbsp Yutaka Rice Vinegar
- 1 tbsp sesame oil
- 1 tsp honey
- 1 tsp grated ginger
Directions
- Cut the cucumbers into bit-sized pieces and slightly smash them using the flat side of a knife. Sprinkle with salt and set aside for 10 minutes to release excess water.
- In a small bowl, whisk tigether the yuzu, tahini, soy sauce, rice vinegar, sesame oil, honey and grated ginger to create the dressing.
- Arrange the soba noodles in serving bowls. Top with the smashed cucmber, cooked gyoza, and shredded carrot. Drizzle the sesame yuzu dressing over the salad and sprinkle with Yutaka Sesame seeds.
- Serve immediately and enjoy.
