Valentine's day Uramaki Sushi Roll
Uramaki means inside out roll, which means the rice is on the outside giving it a unique variation to the usual sushi roll and the filling in this recipe consists of raw tuna and avocado, perfect for Valentine's day.

Ingredients
Serves 2
- For convenience, you can use Yutaka Sushi Kit
- 300g cooked sushi rice (prepare the rice according to the instructions on pack).
- 30ml Sushi seasoning or 2 tbsp rice vinegar, 1 tbsp sugar, 1/2 tsp salt to make your own sushi seasoning
- 2 Sushi Nori Sheets
- Rolling mat
For fillings:
- Raw tuna (or salmon), alternative 60g tin tuna mixed with 1½ tbsp mayonnaise
- 1/2 avocodo, sliced lengthways
- Tobiko fish roe egg (optional)
- Sesame seeds (optional)
To serve:
- Sushi ginger
- Soy sauce
- Wasabi paste
Directions
- Cover a bamboo mat with cling film to stop the sushi rice sticking on the surface. Place a bamboo mat on a clean surface. Cut the nori sheet in half, along the lines on the nori, then place the nori smooth side down at the front of the mat.
- Wet your hand in water to stop the rice sticking to your hand. Spread an apple sized handful of the cooked rice (approx. 100g) as evenly as possible on the nori, the nori should be covered by the sushi rice completely. (You don't need to leave the gap for Uramaki rolls)
- Sprinkle the fish roe egg or roasted sesame seeds over the sushi rice, then turn the nori and rice over carefully.
- Place the fillings side by side in a horizontal line along the centre of the nori
- Start rolling the nori carefully and evenly around the fillings in the middle as so that the edge of the bottom nori can meet near the edge of the top (1.5cm from the top), using the mat to help shape it, rolling away from you and pressing firmly.
- Once the roll is complete, press down firmly on the mat helping to compress the roll slightly so that it keeps its shape. Push the side of the sushi roll furthest away from you down with the mat so that it starts spreading out. The goal is to create a teardrop shape that will become half of the heart piece.
- Using a very sharp knife, cut the roll in half, and then cut the halves into 3 even lengths. Wash or wipe with a wet towel the knife after cutting each roll to prevent the rice from sticking to it and to ensure a cleaner cut
- Press two roll pieces together to create one whole heart shape pieces. Use your hand to shape it if needed.
- Serve with soy sauce and wasabi paste or suggested sauces. Eat sushi ginger between sushi rolls to cleanse the palate.
