Loco Moco Donburi

A delicious fusion of Hawaiian and Japanese comfort food. This one-bowl wonder features a hamburger patty smothered in rich gravy, topped with a fried egg, and served over fluffy rice. It's no wonder this dish is a hit in both Hawaii and Japan.

Ingredients

  • 200g British beef mince
  • 1 small onion, finely chopped
  • 1 egg
  • 2 tbsp Yutaka Panko
  • 1 tbsp Worcestershire sauce
  • 1 tbsp milk
  • 1 tbsp vegetable oil
  • 200ml beef stock
  • 1 tbsp Yutaka Soy Sauce
  • 1 tbsp ketchup
  • 1 tsp Yutaka Mirin
  • 1 tsp cornflour (cornstarch), mixed with 2 tsp water
  • 200g cooked Yutaka rice
  • Salt and pepper, to taste
  • Spring onions, finely sliced (optional, for garnish)

Directions

  1. In a bowl, mix the beef mince, half of the chopped onion, egg, panko breadcrumbs, Worcestershire sauce, milk, salt and pepper until well combined.
  2. Heat the vegetable oil in a large frying pan over medium heat. Add the patties and cook for 4-5 minutes on each side, or until browned and cooked through. Remove the patties from the pan and set aside.
  3. In the same pan, add the remaining chopped onion and saute for 2-3 minutes until softened.
  4. Add the beef stock, soy sauce, ketchup, and mirin to the pan. Stir to combine and bring the mixture to a simmer.
  5. Add the cornflour mixture to the pan and stir continuously until the sauce thickens, about 1-2 minutes.
  6. Return the patties to the pan and spoon some of the sauce over them. Simmer for another 2 minutes to let the flavours meld.
  7. Serve the cooked rice in bowls, place the beef patties on top, and drizzle with the thickened sauce. Optionally, garnish with finely sliced spring onions for a fresh touch.
