A quick and easy miso glazed salmon full of nutrition, serve with salad and rice for a quick and easy workday dinner.

Ingredients
2 tbsp Miso2 tbsp Mirin
1 tbsp cooking sake (optional)
2 pieces of skin-on salmon fillets
To serve:
Steamed rice

Directions
- Preheat oven to 220°C.
- Mix miso and mirin in a small bowl. Add cooking sake and sugar if preferred (optional).
- Brush the miso glaze evenly over the salmon.
- Leave to marinade for 15 mins or more to allow the flavour to infuse the salmon. Marinade in fridge for 2 hours for more depth of flavour.
- Grease a small baking tray with oil and place salmon fillets with skin side down. Remove excess miso sauce from the salmon as miso is very easy to burn.
- Grill the salmon in the oven for 10 - 15 minutes until cooked. Alternatively, pan-fry the salmon until cooked through.
- Serve with salad leaves and steamed rice.
