Miso Glazed Salmon
A quick and easy miso glazed salmon full of nutrition, serve with salad and rice for a quick and easy workday dinner.

Ingredients
2 tbsp Miso2 tbsp Mirin
1 tbsp cooking sake (optional)
2 pieces of skin-on salmon fillets
To serve:
Steamed rice

Directions
1. Preheat oven to 220°C2. Mix miso and mirin in a small bowl. Add cooking sake and sugar if preferred (optional)
3. Brush the miso glaze evenly over the salmon.
4. Leave to marinade for 15 mins or more to allow the flavour to infuse the salmon. Marinade in fridge for 2 hours for more depth of flavour.
5. Grease a small baking tray with oil and place salmon fillets with skin side down. Remove excess miso sauce from the salmon as miso is very easy to burn.
6. Grill the salmon in the oven for 10 - 15 minutes until cooked. Alternatively, pan-fry the salmon until cooked through.
7. Serve with salad leaves and steamed rice.
