Ingredients
- 1 Pack Yutaka Udon Noodles
- 2 Tbsp Yutaka White Miso Paste
- 50g Fresh Basil Leaves
- 30g Pine nuts
- 1 Garlic Clove
- 50g Parmesan
- 100ml Olive Oil
- 1 Tbsp Yutaka Soy Sauce
- 1 Tbsp Lemon Juice
- Salt and pepper
Directions
- Cook the udon noodles according to the package instructions. Drain and set aside.
- In a food processor, combine the fresh basil leaves, pine nuts, and garlic clove. Pulse until finely chopped.
- Add the white miso paste, grated Parmesan cheese, soy sauce and lemon juice to the food processor. Pulse to combine.
- With the food processor running, slowly pour in the olive oil until the mixture becomes a smooth pesto. Season with salt and pepper to taste.
- In a large bowl, toss the cooked undon noodles with the miso pesto until evenly coated.
- Divide the miso pasto undon into bowls and enjoy!
