Miso with fresh basil pesto

Ingredients

  • 1 Pack Yutaka Udon Noodles
  • 2 Tbsp Yutaka White Miso Paste
  • 50g Fresh Basil Leaves
  • 30g Pine nuts
  • 1 Garlic Clove
  • 50g Parmesan
  • 100ml Olive Oil 
  • 1 Tbsp Yutaka Soy Sauce
  • 1 Tbsp Lemon Juice
  • Salt and pepper

Directions

  1. Cook the udon noodles according to the package instructions. Drain and set aside.
  2. In a food processor, combine the fresh basil leaves, pine nuts, and garlic clove. Pulse until finely chopped.
  3. Add the white miso paste, grated Parmesan cheese, soy sauce and lemon juice to the food processor. Pulse to combine.
  4. With the food processor running, slowly pour in the olive oil until the mixture becomes a smooth pesto. Season with salt and pepper to taste.
  5. In a large bowl, toss the cooked undon noodles with the miso pesto until evenly coated.
  6. Divide the miso pasto undon into bowls and enjoy!
