Spicy Butternut and Peanut Udon

Ingredients

  • 1 Pack Yutaka Udon Noodles
  • 1 Packet Frozen Butternut Squash
  • 150g Tenderstem Broccoli
  • 4 Spring Onions
  • 2 Garlic Cloves
  • 50g Peanuts
  • 1 Tbsp Yutaka Soy Sauce
  • 1 Tbsp Yutaka Rice Vinegar
  • 1 Chilli
  • 2 Tbsp Oil

Directions

  1. Heat 1 Tbsp oil in a frying pan and add the frozen squash. Fry for 5-6 minutes, turning regularly.
  2. Whilst the butternut squash is frying, cook your noodles according to packet instructions.
  3. Chop your chilli and garlic and cook in a small pan with oil. Add the soy sauce, vinegar and 1 Tbsp water.
  4. Add the noodles, broccoli and spring onions to the butternut squash along with the mixture in the small pan.
  5. Crush the peanuts and scatter over the noodles. And serve.
