Spicy Butternut and Peanut Udon

Ingredients
- 1 Pack Yutaka Udon Noodles
- 1 Packet Frozen Butternut Squash
- 150g Tenderstem Broccoli
- 4 Spring Onions
- 2 Garlic Cloves
- 50g Peanuts
- 1 Tbsp Yutaka Soy Sauce
- 1 Tbsp Yutaka Rice Vinegar
- 1 Chilli
- 2 Tbsp Oil
Directions
- Heat 1 Tbsp oil in a frying pan and add the frozen squash. Fry for 5-6 minutes, turning regularly.
- Whilst the butternut squash is frying, cook your noodles according to packet instructions.
- Chop your chilli and garlic and cook in a small pan with oil. Add the soy sauce, vinegar and 1 Tbsp water.
- Add the noodles, broccoli and spring onions to the butternut squash along with the mixture in the small pan.
- Crush the peanuts and scatter over the noodles. And serve.
