Butternut squash Miso Salsa

Ingredients

  • 1 Butternust Squash
  • 4 Tsp Yutaka White Miso Paste
  • 2 Tbsp Oil
  • 3 Cherry Tomatoes
  • 1 Celery Stalk
  • 1 Red Pepper
  • 1/2 Tsp Parsley
  • 1 Tbsp Yutaka Rice Vinegar

Directions

  1. Chop your butternut squash in half and scoop the seeds out the middle. Finely chop the cherry tomatoes, celery and red pepper.
  2. Mix together 1 tbsp oil and 2 tbsp miso paste - brush the inside of the squash with the mixture.
  3. Put the squash on a baking tray and cook for half an hour.
  4. Mix together the rest of the miso paste, tomatoes, celery, pepper and parsley in a bowl and set aside.
  5. Once the squash is cooked, filled the middle with the salsa and serve.
