Ingredients

  • 200g Yutaka Soba Noodles
  • 1 cup cherry tomatoes, chopped
  • 2 cups mixed salad leaves
  • 1 cup red cabbage, thinly sliced
For the Miso Vinaigrrette:
  • 2 tbsp Yutaka White Miso Paste
  • 1 tbsp Yutaka Rice Vinegar
  • 1 tbsp Yutaka Soy Sauce
  • 1 tbsp sesame oil
  • 1 tsp honey
  • 1 tsp grated ginger
  • 1 tbsp water (to adjust consistency)

Directions

  1. Cook the Yutaka Soba Noodles according to the packet intructions. Rinse under cold water and drain well.
  2. In a bow, whisk together the miso paste, rice vinegar, soy sauce, sesame oil, honey, grated ginger, and water to create a smooth vinaigrette.
  3. In a large bowl, combine the soba noodles, cherry tomatoes, salad leaves, and red cabbage.
  4. Pour the miso vinaigrette over the salad and toss until evenly coated.
  5. Serve immediately, garnish with sesame seeds or chopped spring onions if desired.
