Ingredients
- 200g Yutaka Soba Noodles
- 1 cup cherry tomatoes, chopped
- 2 cups mixed salad leaves
- 1 cup red cabbage, thinly sliced
- 2 tbsp Yutaka White Miso Paste
- 1 tbsp Yutaka Rice Vinegar
- 1 tbsp Yutaka Soy Sauce
- 1 tbsp sesame oil
- 1 tsp honey
- 1 tsp grated ginger
- 1 tbsp water (to adjust consistency)
Directions
- Cook the Yutaka Soba Noodles according to the packet intructions. Rinse under cold water and drain well.
- In a bow, whisk together the miso paste, rice vinegar, soy sauce, sesame oil, honey, grated ginger, and water to create a smooth vinaigrette.
- In a large bowl, combine the soba noodles, cherry tomatoes, salad leaves, and red cabbage.
- Pour the miso vinaigrette over the salad and toss until evenly coated.
- Serve immediately, garnish with sesame seeds or chopped spring onions if desired.
