Japanese Miso Soup

Ingredients

  • 590ml Water
  • 1 Dashi Packet
  • 4 Tbsp Yutaka Miso Paste
  • 2 Tbsp Toasted White Sesame Seeds
  • 1 Cucumber (remove seeds)
  • 1/2 Tsp Salt
  • 5 Spring Onions
  • 1 Fillet Cooked Salmon
  • 1 Packet Yutaka Tofu

Directions

  1. Combine your water and dashi packet in a pan, then simmer on a medium heat for 2-3 minutes. Remove from the heat and cool the mixture over a bowl of iced water.
  2. Line a baking tray with foil and then spread your miso paste across. Toast in the overn for a couple of minutes and then set aside.
  3. Add the white sesame seeds to a mortar and grind them down. Next, add the miso.
  4. Whilst the miso is cooling, thinly slice both your cucmber spring onions and sprinkle the sliced cucumber with salt.
  5. Break up your cokked salmon fillet into pieces and chop your tofu into cubes.
  6. Slowly add the dashi to the miso, stirring as you go.
  7. Add the cucumber, spring onion, salmon and tofu into the mixture and enjoy!
