Ingredients
- 590ml Water
- 1 Dashi Packet
- 4 Tbsp Yutaka Miso Paste
- 2 Tbsp Toasted White Sesame Seeds
- 1 Cucumber (remove seeds)
- 1/2 Tsp Salt
- 5 Spring Onions
- 1 Fillet Cooked Salmon
- 1 Packet Yutaka Tofu
Directions
- Combine your water and dashi packet in a pan, then simmer on a medium heat for 2-3 minutes. Remove from the heat and cool the mixture over a bowl of iced water.
- Line a baking tray with foil and then spread your miso paste across. Toast in the overn for a couple of minutes and then set aside.
- Add the white sesame seeds to a mortar and grind them down. Next, add the miso.
- Whilst the miso is cooling, thinly slice both your cucmber spring onions and sprinkle the sliced cucumber with salt.
- Break up your cokked salmon fillet into pieces and chop your tofu into cubes.
- Slowly add the dashi to the miso, stirring as you go.
- Add the cucumber, spring onion, salmon and tofu into the mixture and enjoy!
