Japanese Pulled Pork Tacos

Ingredients

  • 1 kg pork shoulder
  • 5 tbsp Yutaka soy sauce
  • 2 tbsp Yutaka mirin
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 200g cabbage, finely shredded
  • 1 carrot, grated
  • 2 tbsp Yutaka rice vinegar
  • 8 small taco tortillas
  • Lime wedges (for serving)

Directions

  1. Preheat the oven to 150°C. Mix soy sauce, mirin, honey, and minced garlic.
  2. Season the pork shoulder with salt and pepper, place it in a roasting dish, pour the sauce mixture over the pork.
  3. Cover with foil and roaster for 3-4 hours until tender.
  4. While the pork is cooking, combine shredded cabbage and grated carrot in a bowl. Mix with rice vinegar, soy sauce, and salt. Toss with vegetables.
  5. Shred the pork and mix with the remaining juices.
  6. Warm taco trotillas in a dry frying pan.
  7. Place pulled pork on each tortilla, top with cabbage slaw and serve with lime wedges.
