Japanese Pulled Pork Tacos

Ingredients
- 1 kg pork shoulder
- 5 tbsp Yutaka soy sauce
- 2 tbsp Yutaka mirin
- 2 tbsp honey
- 2 cloves garlic, minced
- 200g cabbage, finely shredded
- 1 carrot, grated
- 2 tbsp Yutaka rice vinegar
- 8 small taco tortillas
- Lime wedges (for serving)
Directions
- Preheat the oven to 150°C. Mix soy sauce, mirin, honey, and minced garlic.
- Season the pork shoulder with salt and pepper, place it in a roasting dish, pour the sauce mixture over the pork.
- Cover with foil and roaster for 3-4 hours until tender.
- While the pork is cooking, combine shredded cabbage and grated carrot in a bowl. Mix with rice vinegar, soy sauce, and salt. Toss with vegetables.
- Shred the pork and mix with the remaining juices.
- Warm taco trotillas in a dry frying pan.
- Place pulled pork on each tortilla, top with cabbage slaw and serve with lime wedges.
