Roast Sweet Potato Salad

Ingredients

  • 4 Sweet Potatoes
  • 3 Beetroots
  • 3 Red Onions
  • 2 Radishes
  • 2 Tsp Oil
  • 1 Tsp Yutaka Rice Vinegar
  • 1 Tsp Yutaka Miso Paste
  • 250g Rocket
  • Coriander (to serve)

Directions

  1. Chop your sweet potatoes, beetroot and onions into wedges. Finely slice your radishes.
  2. Drizzle the sweet potatoes, beetroot and onions in 1tsp oil and roast in the oven or air fryer for around 30 minutes.
  3. Whilst the vegetables are cooking, miz the miso paste, rice vinegar, 1 tsp oil in a bowl.
  4. Add the rocket and radishes to the bowl and toss.
  5. Once the vegetables are cooked, mix well with salad bowl and serve with coriander.
