Ingredients
- 4 Sweet Potatoes
- 3 Beetroots
- 3 Red Onions
- 2 Radishes
- 2 Tsp Oil
- 1 Tsp Yutaka Rice Vinegar
- 1 Tsp Yutaka Miso Paste
- 250g Rocket
- Coriander (to serve)
Directions
- Chop your sweet potatoes, beetroot and onions into wedges. Finely slice your radishes.
- Drizzle the sweet potatoes, beetroot and onions in 1tsp oil and roast in the oven or air fryer for around 30 minutes.
- Whilst the vegetables are cooking, mix the miso paste, rice vinegar, 1 tsp oil in a bowl.
- Add the rocket and radishes to the bowl and toss.
- Once the vegetables are cooked, mix well with salad bowl and serve with coriander.
