Ingredients

  • 300g cooked Yutaka Sushi Rice (slightly cooled)
  • pinch of salt
  • 1 sheet of Yutaka Sushi Nori

Directions

  1. Season the cooked rice with a pinch of salt and rice vinegar if using, then divide into 4 equal portions.
  2. For the yellow chicks: mix 2 portions of rice with the mashed egg yolk until evenly coloured. Shape into round balls unsing lightly wet hands. Cut small triangles from nori to make beaks and dots for eyes. Use tweezers to carefully press them into the rice balls.
  3. For the white rabbits: shape the remaining plain rice into balls. Cut two thin ovel shapes from ham for the ears and press them gently into the top of each ball. Cut small nori shapes for eyes and mouths, and press onto the rice.
  4. Serve your Easter onigiri on a plate or bento box for an Easter Feast.
