Miso and Mackerel Bowl

Ingredients
- 1 small onion
- 1 garlic clove
- 1 inch piece of ginger
- 2 tbsp Yutaka white miso paste
- 1 pack Yutaka udon noodles
- 1 tin of mackerel in oil
- 1 tbsp Yutaka soy sauce
- 1 spring onion
- 1 tsp chilli oil
- 1 bunch of spinach
Directions
- Chop your onion, garlic, ginger and spring onion.
- Heat oil in a large saucepan over medium heat. Add the onion and cook for 3-4 minutes until softened, then add the garlic and ginger, cooking for another minute until fragrant.
- Pour in the water and bring to a simmer. Stir in the miso paste and soy sauce until fully dissolved.
- Cook the noodles according to the package intructions, then drain and add to the broth.
- Drain your mackerel, stir it in and cook for 2-3 minutes until heated through.
- Ladle the soup into bowls, garnish with sliced spring onions, spinach and a drizzle of chilli oil.
