Miso and Mackerel Bowl

Ingredients

  • 1 small onion
  • 1 garlic clove
  • 1 inch piece of ginger
  • 2 tbsp Yutaka white miso paste
  • 1 pack Yutaka udon noodles
  • 1 tin of mackerel in oil
  • 1 tbsp Yutaka soy sauce
  • 1 spring onion
  • 1 tsp chilli oil
  • 1 bunch of spinach

Directions

  1. Chop your onion, garlic, ginger and spring onion.
  2. Heat oil in a large saucepan over medium heat. Add the onion and cook for 3-4 minutes until softened, then add the garlic and ginger, cooking for another minute until fragrant.
  3. Pour in the water and bring to a simmer. Stir in the miso paste and soy sauce until fully dissolved.
  4. Cook the noodles according to the package intructions, then drain and add to the broth.
  5. Drain your mackerel, stir it in and cook for 2-3 minutes until heated through.
  6. Ladle the soup into bowls, garnish with sliced spring onions, spinach and a drizzle of chilli oil.
